Chef Sánchez has joined as Calson’s Culinary Ambassador, leading menu development and hands-on culinary direction company-wide, with a flagship debut planned at two new communities opening in January 2027: Ananta Senior Living in Santa Cruz and The Linden Collection in Livermore. The idea began with a conversation. Jason Reyes, Managing Partner at Calson and an Incite member, approached John Scatena, Incite’s Director of Business Development West, with a bold vision: bring hospitality-grade dining to senior living across Calson’s communities. Through John’s relationships in the culinary world, that conversation led to Chef Aarón Sánchez, and the connection was immediate. Chef Sánchez is bringing in longtime friend and fellow chef John Mooney as Regional Culinary Director to execute the vision and train culinary teams across every Calson community.

For Chef Sánchez, the work is personal. As a third-generation chef and founder of the Aarón Sánchez Impact Fund, which provides scholarships and mentorship to aspiring young chefs, he has spent his career investing in the people behind the plate as much as the plate itself.
